ARRABIATA SAUCE....!!!!
Every mouth starts watering at it's mention...
Well here I have its simple and easy recipe....
Ingredients:(servings = 2)
1. Tomato = 3 (medium sized and pureed)
2. Garlic = 4 cloves (medium sized and crushed)
3. Onion = 1 (small sized)
4. Capsicum = 1/4 of a medium sized
5. Tomato ketchup = 2tbsp
6. Maggi hot&sweet ketchup = 3tbsp
7. Oregano = 1tsp
8. Butter (olive oil preferred) = 2tbsp
9. Salt to taste
10. Cheese


Method:
1. Heat and melt butter in a pan.
2. Add garlic and saute them till the fragrance changes.
3. Add onion and capsicum and lightly saute.
4. Add the tomatoes and let it simmer for 1-2 mins.
5. Add both the ketchups and simmer.
6. Add oregano and salt and simmer.
7. Turn off the heat and add cheese. You can either mix the cheese or let it be on top....

ENJOY.....!!!!!!

Making pasta dough is similar to making dough for a naan...
Here I've posted the recipe for making a pasta dough without eggs....

Ingredients: (serving = 4)

  1. All purpose flour (maida) = 2 cups
  2. Salt = 1tsp
  3. Oil (olive oil preferred) = 2tsp
  4. Water = as per consistency

Method:

  1. Pour the flour on a flat surface or a mixing bowl as per your convenience.
  2. Make a well in the centre and add salt.
  3. Mix the dry ingredients and then add oil.
  4. Thoroughly mix the ingredients so that no lumps are formed.
  5. Now add water slowly and in steps, kneading the mixture till a smooth dough is formed.
  6. Knead the dough for about 5 mins and then let it rest for 10 mins.
  7. Cover it in a clinging plastic and refrigerate for 30 mins.
After refrigeration take out the dough and use it to roll into shapes that you want....!
Tried a new pasta types today....
Funny though they may sound, they did taste pretty good....
The first one I made was called 'PICHI'.... 

The name simply means hand rolled. This pasta is freshly made before cooking. I hand rolled them into thin noodle like and dropped them into boiling water with alot of salt. I then placed it on a plate and poured the hot arrabiata sauce over it....
The next 1 i made is called flat-noodle pasta...
Its a very simple method and easiest to make....
I rolled the dough into a very flat (about 1mm thick) roti and then cut it into thin strips....
I then boiled these strips for 4-5 mins on high flame, drained and washed in cold water...
I added this pasta into the arrabiata sauce and voila!!!! Pasta is ready to be served...
